PURPOSE: A method and apparatus for manufacturing rice cake are provided, thereby reducing the time for manufacturing rice cake, improving the manufacturing yield and productivity, and giving softness and glutinous taste to the rice cake by forming appropriate air pores in dough of the rice cake. CONSTITUTION: The method for manufacturing rice cake comprises the steps of: preparing and providing rice powder, salt and water; mixing and stirring the rice powder, salt and water; kneading and pressurizing the mixture; steaming and re-kneading the mixture; second kneading the steamed mixture, and pressurizing it to prepare dough for rice cake; and forming the dough for rice cake in a certain shape. The apparatus for manufacturing rice cake comprises a stirrer positioned in a main frame, and mixing the rice powder from a main material supplying portion and salt and water from a supplementary material supplying portion; a first kneading device containing a pair of screws reciprocally rotating and kneading the mixture for rice cake; a steaming device steaming and re-kneading the mixture for rice cake; and a second kneading device containing a pair of second screws reciprocally rotating and kneading the mixture for rice cake. |
