PROBLEM TO BE SOLVED: To always cut a burdock to a specific thickness without changing the amount of biting on a burdock even when the thickness of the burdock changes and prevent the sticking of the cut skin. SOLUTION: A burdock peeling machine is provided with a plurality of sets of burdock transfer means and burdock skin cutting means. In the peeling machine, the skin cutting means 60 is provided with the following. A pair of blades 62A and 62B mutually oppositely arranged and having skin guide parts 62b formed in parts on the side opposite to the blade tips, skin thickness regulating plates 63 fixed to the blades 62A and 62B so as to form skin passages between the blade tips of the blades 62A and 62B, a pair of blade holding plates 65 having one end on which the skin thickness regulating plate 63 is freely rotatably supported and the other end shakably freely supported and tension springs 74 urging the pair of blade holding plates 65, respectively so as to bring the pair of skin thickness regulating plates 63 into contact with the burdock surface.
