<P>PROBLEM TO BE SOLVED: To provide anthocyanin coloring matter with improved heat resistance and its preparing method, and to provide a coloring method of a food using the coloring matter, and a colored food using the coloring matter. <P>SOLUTION: The heat resistance of the coloring matter is improved by adjusting an aqueous solution containing the coloring matter to a pH of 4.0-6.5, and then heating the solution at a temperature of 40-100°C. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
