<p><P>PROBLEM TO BE SOLVED: To provide a method for producing low carbohydrate and foaming alcoholic beverage by using dietary fiber decreasing carbohydrate as a part of raw materials, when a foaming alcohol beverage is produced in no use of barley, wheat and malt and provide the low carbohydrate and foaming alcoholic beverage that is produced by this method. <P>SOLUTION: Without use of barley, wheat and molt, syrup including carbon source, nitrogen source, hop, pigment, raw materials improving foaming/foam quality and water are used to produce a beer-like foaming alcoholic beverage. In this case, dietary fiber is added to the pre-fermentation mixture. Thereby the resultant beverage decreases carbohydrate and the quality of the beverage is improved and other excellent qualities, for example, mellowness, richness, denseness, clean aftertaste, excellent taste and flavor are retained.
