Red pepper paste(kochujang) containing Lentinus edodes powder capable of achieving almost the same taste as traditional red pepper paste despite containing the Lentinus edodes is provided. The product has efficacy of Lentinus edodes and good taste and can be used as health food. Raw material for red pepper paste containing 100 parts by weight of glutinous rice flour and 130 to 170 parts by weight of malt powder is heated at 100deg.C for saccharification, added with 5 to 7.5% by weight of Lentinus edodes powder(a moisture content of 20% or less) with a mesh of 80 to 120 and heated for 2 to 5min, based on the weight of the glutinous rice flour. The mixture is mixed with red pepper powder and 5 to 15% by weight of salt, cooled to room temperature, mixed with 25 to 40 parts by weight of fermented soybean powder and fermented in a sunny place for 60 days or more. The glutinous rice red pepper paste can be added with 5 to 20% by weight of sugar. |
