A lipidic composition intended for use as a food or in foods based on a mixture of oils selected to guarantee a balance between all the lipid families capable of supplying the essential fatty acids in optimal physiological proportions and of regularizing the metabolism of these fatty acids. The composition is particularly suitable for use as a domestic oil or as a substitute for the lipids of a food.
