<P>PROBLEM TO BE SOLVED: To provide packaged soybean curd produced under review of quality retention of flavor from the aspect of a packaging container, and excellent in quality retention of flavor even over the shelf life of 10 days: and to provide a method for producing the packaged soybean curd. <P>SOLUTION: This packaged soybean curd comprises soybean and water to be packaged, and is obtained through the following process: preparing an oxygen transmission-resistant or oxygen transmission-retardant barrier packaging material having an oxygen transmission amount of ≤3.0 cc/m<SP>3</SP>atm 24hrs; using deaerated water having dissolved oxygen of ≤1.5 mg/L as the water to be packaged; preferably using soybean curd prepared from soy milk having the dissolved oxygen of ≤1.0 mg/L; and charging the soybean curd and the water to be packaged in a plastic container made of the oxygen transmission-resistant or the oxygen transmission-retardant barrier packaging material. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
