Production of textured proteinaceous meat analogue from extrudate passing through conduit of known cross-sectional shape involves determining a cutting profile for extrudate, making a slice through extrudate co-linear with longest axis of cross-sectional shape via one or more blade according to the determined profile in an opposite direction to flow of the extrudate through the conduit. An independent claim is included for a production facility for food products incorporating a cutting device for slicing the textured proteinaceous meat analogue.
