PROBLEM TO BE SOLVED: To adjust the surface of a steel sheet hot-dipped through immersion in a plating bath into various appearances, by spraying a gas to the surface to cool it and controlling a cooling rate during cooling it. SOLUTION: This adjusting method comprises spraying the gas to the surface of the hot-dipped steel sheet 3a which has been plated by being immersed in the plating bath 2 and has adjusted coating weight, with the use of a gas cooling means 10 capable of adjusting its cooling ability, to cool the surface; and adjusting the cooling rate when spraying the gas to the steel sheet 3a, to adjust the surface appearance.
