Enzymatic transesterification process for the preparation of diglyceride (I) (diacyl glycerin) and its concentrate comprises reaction of triglyceride (triacyl glycerin) or its mixtures with monoglyceride (monoacyl glycerin) under stirring in the presence of lipase, where the removal of the water present in the reaction mixture is carried out in vacuum.
