<P>PROBLEM TO BE SOLVED: To provide meat-containing processed food obtained by imparting moderate meat feeling and soft and juicy palate feeling to meat ingredients: to obtain a meat processing pickle composition slightly taking foam therein when preparing the pickle composition in its production process and facilitating the production process: and to provide processed food using the composition. <P>SOLUTION: The pickle composition comprises the following: (a) milk whey protein having a gel strength of ≤4 N/cm<SP>2</SP>represented by a curd value after heating 15 wt.% milk whey-containing solution to have 8°C followed by cooling the solution down to 4°C, and (b) milk whey protein having a gel strength of ≥10 N/cm<SP>2</SP>represented by a curd value after heating 15 wt.% milk whey-containing solution so as to have 80°C followed by cooling the solution down to 4°C. An amount of the milk whey protein in each of (a) and (b) added is 0.5-30 wt.% based on the pickle composition. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
