<P>PROBLEM TO BE SOLVED: To provide a gel-like functional food composed of a food selected from the group consisting of a food containing water as a dispersion medium and dietary fibers as a dispersoid, a food with a high protein content and a food containing chondroitin sulfate and having at least -400 mV oxidation-reduction potential. <P>SOLUTION: The gel-like functional food is obtained as follows. Tap water in a volume of 500 ml at 10°C water temperature is subjected to sterilization and dechlorinating treatment and then precise filtration treatment to remove an off-taste, an off-flavor and impurities. Hydrogen gas is blown under 0.9 MPa gas pressure for 2.5 min while bringing the resultant water into contact with a reduction catalyst supporting a metal on siliceous graphite porphyry. An aluminum pouch is filled with 490 cc of the produced water having -615 mV oxidation-reduction potential and 10 g of commercially available gelatin derived from a bovine cartilage and converted into low molecules by enzymic fermentation so as to be readily digested and absorbed in an alimentary canal is then added.
