<P>PROBLEM TO BE SOLVED: To provide a yeast extract which has an effect to impart an excellent body taste and an excellent thick taste touch to foods or drinks and an effect to reduce unpleasantness, and to provide a method for producing the same. <P>SOLUTION: This yeast extract having a peptide content of ≥20 wt. % and a peptide content/total amino acid content ratio of ≥80%. When the yeast extract is added to a food or drink, the body taste and the thick taste touch can be imparted to the food or drink, and the unpleasant smell of the food or drink can be reduced. Furthermore, the yeast extract having a reduced 5'-inosinic acid content and a reduced 5'-guanylic acid content can impart the above effects without worsening the original taste of the food or drink. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
