[PROBLEMS] To provide a method for utilizing crustaceans, particularly euphausiaceans as resources efficiently, more particularly, a method of recovering efficiently fat-soluble available substances such as carotenoids, highly unsaturated fatty acids, and phospholipids from crustaceans, and utilizing them. [MEANS FOR SOLVING PROBLEMS] An aggregate of eyeballs of a crustacean; use of the aggregate as a source of supply of carotenoids, highly unsaturated fatty acids, and/or phospholipids; and foods or nutritional supplements for the furnishing of carotenoids, highly unsaturated fatty acids and/or phospholipids, containing the aggregate either as such or in a pulverized state. The aggregate is produced by dehydrating a crustacean to facilitate the release of eyeballs, releasing the eyeballs by physical impact, and recovering an aggregate of the eyeballs. The crustacean is preferably an euphausiacean or a mysida. |
