<P>PROBLEM TO BE SOLVED: To provide a processed food hardly presenting bitter taste/astringent taste derived from proteins and/or polyphenols in acidic region presenting bitter taste/astringent taste even if containing these materials at high concentrations. <P>SOLUTION: This processed food is obtained by using together with xyloglucan at least one kind of matter selected from food raw material proteins and polyphenols presenting bitter taste or astringency taste in acidic region. The food raw material protein includes cow milk protein, soybean protein or albumen protein. The polyphenols include matters generally presenting bitter taste/astringency taste, such as tannin, tannic acid and catechins such as epigallocatechin gallate (EGCG), gallic acid, coffee acid and chlorogenic acid. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
