<P>PROBLEM TO BE SOLVED: To provide a foaming oil-in-water emulsified product to be used for decoration of cakes and sandwiches, having less deterioration of quality of strange taste and smell and excellent in flavor even though exposed to optical illumination of e.g. a fluorescent lamp. <P>SOLUTION: This foaming oil-in-water emulsified product contains oil and fat, a nonfat milk solid, water and an emulsifier. The oil and fat has fatty acid composition of constituent fatty acid in oil and fat as ≤2% of the total amount of butyric acid and caproic acid, ≥40% of the total amount of lauric acid and palmitic acid, ≤50% of the total amount of oleic acid, linoleic acid and linolenic acid, and ≤5% of the total amount of linoleic acid and linolenic acid. The foaming oil-in-water emulsified product contains at least one kind selected from tocopherol, rutin and tea extract. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
