<P>PROBLEM TO BE SOLVED: To obtain a food and beverage raw material capable of being mixed as it is with another food and cooked by removing bitterness and stringent taste specific to soybean and pulverizing. <P>SOLUTION: The dehulled, de-fatted soybean having ≥48 wt.% protein content and de-fatted soybean germ powder having 1-3 wt.% soybean isoflavone are produced by removing ≥50 wt.% hull and separating seed leaves, or making soybean germ (hypocoty) having ≥50 wt.% purity, defatting each of them, then steaming them with steam without drying for heat-degenerating to remove the bitterness and astringent taste almost. Then, by subjecting them to super fine powder-processing so as to make each containing ≥50 wt.% particles having ≤10 μm powder diameter and ≥80 wt.% particles having ≤18 μm particle diameter of the total, they are used as the food and beverage raw material. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
