The production of fresh high-soya animal fat-free sausage comprises hydration (22) with water (21), of soya protein (20) constituting 2-10 per cent of the sausage, for addition to the chopped pork (11) also accepting emulsified olive oil paste (0.1-1 weight %). An independent claim is also included for the product of the process. The product also contains e.g. salt (14), and is packaged (17) after forming (15) and tying (16). |
