The invention relates to the use of anhydrous calcium sulphate mortar surface treatment compositions for preventing the formation of a thin layer of calcium-based hydrate particles a few hundredths of a millimetre thick, which layer is formed after pouring, setting and surface drying of the mortar, and increasing the adhesion of the finishing materials to be subsequently deposited on the resulting treated surfaces. Said compositions include at least one latex consisting of an aqueous colloidal emulsion of at least one polymer.
