PURPOSE: A taste modifier and foods, extracts, medicines and dental compositions containing the same are provided. The taste modifier has no toxicity, taste and smell, is prepared cheaply, and removes undesired smell from foods, extracts, medicines and dental compositions. CONSTITUTION: A taste modifier comprises paratinose-heating substance as an effective component, wherein the paratinose-heating substance is obtained by heating paratinose at 140 to 200 deg. C, preferably 150 to 180 deg. C in the presence of 10 to 30 % of water for 10 minutes to 2 hours. The taste modifier comprises 5-£(alpha-D-glucopyranosil oxy) methyl|-2-furancarboxaldehyde represented by the formula 1. The foods, extracts, medicines and dental compositions comprising the taste modifier are provided. |
