PURPOSE: Provided is a method of producing Alaska Pollack roasted with seasoning which is capable of being distributed at normal temperature by soaking Alaska Pollack(Theragra chalcogramma) in a brine solution, coating the soaked Alaska Pollack with a seasoning composition containing catechin and antimicrobial calcium preparations and roasting it. The Alaska Pollack roasted with seasoning hardly changes its color and has extended storage at normal temperature for a long period of time. Therefore, it is distributed or stored with outstanding sensory properties. CONSTITUTION: Alaska Pollack is soaked in a brine solution for a predetermined period of time, coated with a seasoning composition containing 0.01 to 1% by weight of catechin and 0.01 to 1% by weight of antimicrobial calcium preparations and roasted at a predetermined temperature. The soaking process is performed by using 1% sodium chloride aqueous solution for 0.5 to 3sec to give Alaska Pollack having a moisture content of 40 to 50%. |
