<p><P>PROBLEM TO BE SOLVED: To provide an ink-jet ink without causing clogging of a nozzle of an ink-jet printer even when continuous printing over a long period is carried out without eluting a colorant even if the ink is wetted with water when various foods, materials, food packaging materials, etc., in contact with the foods are marked and without causing a feeling of disgust in appearance. <P>SOLUTION: The ink-jet ink comprises 70-91 wt.% of ethanol, 1-13 wt.% of the colorant which is an alcohol-soluble kaoliang pigment or an alcohol-soluble rosewood pigment, 4-8 wt.% of a shellac resin, 0.5-3 wt.% of sodium lactate or potassium lactate, 0.5-5 wt.% of acetic acid or lactic acid, 0-5 wt.% of propylene glycol and 3-10 wt.% of water.
