Production of olive oil comprises defibering of a paste for progressive pressing, with oxidation control

The production of olive oil has forming of a paste, with release of the vegetable fibres of the olive by soft rubbing and subsequent progressive pressing. The entire process is carried out in a single installation which protects against oxidation of the paste.
