The dietetic bread is designed to be eaten in six equal 40 g portions per day, three at breakfast, two at lunch and one at dinner, each portion representing at least 200 calories. Dietetic bread is made from the following ingredients (percentage figures in brackets): wheat flour (32 - 53); water (28 - 44); wheat semolina (2 - 15); rye flour (1 - 7); oat flakes (0.5 - 4); spelt flour (0.5 - 4); yeast (0.5 - 4); wheat gluten (0.5 - 4); wheat bran (0.5 - 4); salt (0.5 - 4); devitalised rye leaven (0.1 - 3); fermented wheat germ (0.1 - 3); wheat fibre (0.1 - 3); fat (0.01 - 2); powdered milk (0.01 - 2). The composition can also contain malted wheat flour (0.01 - 2); ascorbic acid (0.01 - 2); alpha amylase and hemicellulase (0.01 - 2); potassium chloride (0 - 2); lactoserum powder (0.0.5); and dextrose (0 - 0.5). Bread or other bakery products, such as brioches or biscuits, made from the mixture have a greater rehydration level in the stomach after consumption, giving a quick and long-lasting feeling of satiety. |
