A composting system for organic residues has a compost stack with a series of vacuum lances inserted to segments within heap (1) core (2). Each lance is linked to a hose branch to a flexible collector hose (3) to a water trap (5), a vacuum pump (6) and a bio-filter (7). The lances are fabricated of stainless steel with sharp tips and abstraction perforations. The lances are connected to the respective hose, and the hose to the flexible collector hoses, by a snap-fitting.
