<P>PROBLEM TO BE SOLVED: To provide fish paste with spring lobster shells giving consumers feeling and flavor like eating a real spring lobster, to provide a method for producing the fish paste, and to provide fish paste with spring lobster flesh. <P>SOLUTION: The fish paste with spring lobster shells is formed by filling or laying dough 1 obtained by mixing at least the essence of a spring lobster with the fish flesh of codfish or silver jewfish in/on the shells 2, 3 and 4 of respective parts and the ventral thin skin 5 of a spring lobster. The method for producing the fish paste comprises a process of separating a spring lobster into shells of each parts, ventral thin skin and flesh, and a process of steaming up the spring lobster.
