FIELD: food industry. ^ SUBSTANCE: invention relates to methods of protein-free items production containing free amino acids and short peptides. Production method is proposed for peptide/amino acids with fat content less 0.5% mass from raw material containing protein. Method provides for raw material graining and hydrolysis in presence of endogenetic ferments. The produced mass is then subject to separating treatment including coagulation of protein residues. Amino acids/peptides produced by this method contain free amino acids in the amount of 30-60% mass, and fat less 0.5% mass. Amino acids/peptides produced by this method contain free amino acids in the amount of 5-100% mass and fat less 0.5% mass. Hydroxuapatite is produced by this method. Hydrolysis method for protein-containing raw material includes application of endogenetic ferments, heating and blending. Method of peptide/amino acid removal from hydrolysed mixture with molecular weight less 10000 dalton through filter.
