FIELD: food industry, technology for preserving industry. ^ SUBSTANCE: method involves washing and controlling potato, treatment of prepared potato with lipid-containing extract from micromycetes Mortierella minutissima biomass and its timing interval. Potato is peeled, subjected for additional peeling and cut. Cut potato is roasted up to semi-finishing and roasted potato is packaged into bags under vacuum, sealed and pasteurized. Invention provides improving organoleptic properties of the end product. Invention can be used in manufacturing the garnish potato semi-finishing product. ^ EFFECT: improved preparing method.
