The assembly (1) to ferment a liquid (3), e.g. grape juice and wine, controls its temperature in a vessel (2) during at least part of the fermentation process to give a set density change by time. The fermentation is preferably divided into three phases, with an automatic transit between the phases. A sensor (5) registers the density of the liquid, and the fermentation state is established by the level of carbon dioxide exhaust. The fermentation process is set by a control unit (6) and a programmable control (7).
