FREEZING METHOD, AND REFRIGERATOR-FREEZER

PROBLEM TO BE SOLVED: To provide a freezing method inhibiting freshness deterioration such as discoloration of food, increase in germs and accompanying drip outflow all caused by cytoclasis due to enlargement of ice crystals in cells so as to preserve the food in high-quality condition when storing food in a new temperature range. SOLUTION: The freezing method comprises the following process: putting a food 1 on a cooling plate 3 made of a material having excellent thermal conductivity and strength endurable to stress change due to heat shrinkage; freezing the food 1 by an air blasting means 4 and a cooling means 5 cooling the cooling plate 3 and the air blasting means 4 at a freezing speed of 0.1°C/min specified as a lower limit when passing through a maximum ice crystal-generating range until the temperature of the food 1 comes down at 0 to -5°C; and preserving the food 1 so as to have some temperature of 0 to -17°C.
