METHOD FOR PRODUCTION OF PHOSPHATIDYLSERINE AND PURIFICATION THEREOF BY EXTRACTION

The invention relates to a method for the production of phosphatidylserine from a phospholipid (mixture) and serine in an aqueous system by transphosphatidylation in the presence of a protein with phospholipase D (PLD) activity and in the presence of divalent metal ions. Said method is carried out in a solvent system, comprising (a) 100 to 60 wt. % water or an aqueous buffer with pH 5.0 to 6.5 and (b) 0 to 40 wt. % of a water-miscible organic solvent with PLD activating effects, whereby the phosphatidylserine obtained is separated by a fractionating purification. Said method, which can be carried out particularly in pure water, has the main advantage that in subsequent separation steps of the possible remaining starting materials and the product phosphatidylserine, said product is obtained in purities of >95 wt. % and in good yields.
