PROBLEM TO BE SOLVED: To provide an extra high pressure water generator that facilitates pressure adjustment and can reduce time until the pressure reaches a target pressure when the extra high pressure water generator is used to pressurize the delivered extra high pressure water to the target pressure, and its control method. SOLUTION: The extra high pressure water generator calculates a first value for the set target pressure value, and determines whether the value of the delivered pressure detected by a delivered pressure sensor reaches the first value. When the delivered pressure detected by the delivered pressure sensor reaches the first value, the rotation angular velocity of the driving means becomes a first velocity of a predetermined velocity.
