摘要 PROBLEM TO BE SOLVED: To provide a method for producing bread compounded with brown rice flour and good in palate feeling and flavor and also sustaining the palate feeling and flavor even after the lapse of time. SOLUTION: The method for producing bread comprises the 1st step of mixing a sponge material comprising wheat flour, yeast and water to prepare sponge dough, the 2nd step of fermenting the sponge dough, the 3rd step of adding a main kneading material comprising brown rice flour, wheat flour, common salt, water and dry fig to the fermented sponge dough followed by mixing to prepare a main kneaded material, the 4th step of molding the main kneaded material, the 5th step of fermenting the molded main kneaded material, and the 6th step of baking the fermented main kneaded material. By compounding the brown rice flour, the objective bread whose matrix is moist and soft and seldom becomes hard even after the lapse of time can be obtained.
