<P>PROBLEM TO BE SOLVED: To provide a method for producing raw Chinese noodles eatable, in spite of being raw noodle, by simply pouring hot water thereinto and only waiting for a little time without the need of taking time to heat and boil like conventional noodles and to provide a method for cooking the raw Chinese noodles. <P>SOLUTION: This method for producing the raw Chinese noodles comprises using as the main raw material wheat flour containing 8-12 wt.% of wheat flour protein and potato starch flour to obtain a mixture at a potato starch flour formulating ratio of 40-60 wt.%, admixing with the mixture at a formulating ratio of 4-7 pts.wt. of wheat flour gluten and 2.5-5 pts.wt. of albumen powder and making the noodles by a usual method. The unheated Chinese noodles thus produced are made eatable as they are only by pouring hot water thereinto. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
