摘要 <P>PROBLEM TO BE SOLVED: To provide a method for easily producing a flavor composition having homogeneous and excellent caramel flavor through a nonaqueous-system powder mixture reaction without generating lumps. <P>SOLUTION: This method for easily producing the flavor composition comprises reacting dairy product powder with saccharides by heating: wherein a raw material powder mixture having a moisture content of 0.01-10 mass% is subjected to heat reaction while causing vibration using a vibration dryer to produce a flavor composition having favorable caramel feeling.
