<P>PROBLEM TO BE SOLVED: To provide food wrapped with thin dough such as sweet potato steamed meat dumplings improved in palatability, taste, odor and color by bringing the thin dough of sweet potato steamed meat dumplings or the like to contain components of sweet potato worthy as health food and removing sense of incongruity between the thin dough and sweet potato jam when the food is eaten. <P>SOLUTION: The food wrapped with thin dough is prepared by wrapping heat cooked and mashed sweet potato jam with thin dough, steaming the same to a degree in which the thin dough is steamed, or baking to a degree in which the thin dough is not charred. The thin dough is prepared by adding the sweet potato components in 5-40 wt.% in a shape of solid obtained by heat cooking wheat flour as a raw material and the sweet potato components and removing skin and both ends containing a large amount of fibrous materials, or mashed sweet potato jam, adding suitable amount of water and sufficiently kneading the mixture, rolling the mixture in about 0.3-0.8 mm thickness, and forming it into a predetermined size. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
