<P>PROBLEM TO BE SOLVED: To provide a calcium-containing dried bread-like piece of wheat gluten containing nutrients other than protein, in light of the fact that dietary habit of Japanese becomes diversified recently and thereby western style food (meat) is much taken while dried bread-like piece of wheat gluten is familiarized from ancient days, and excellent in digestibility, and taken as a valuable protein source. <P>SOLUTION: The dried bread-like piece of wheat gluten is obtained by adding wheat flour, water, sodium bicarbonate, and 5 wt.% of calcium to gluten extracted from the wheat flour so as to provide richly nutritious food containing ≥200 mg of calcium in 10 g of the dried bread-like piece of wheat gluten. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
