The invention relates to whole-egg or yolk-based fat products containing a high proportion of triglycerides and/or phospholipids of long-chained, polyunsaturated fatty acids with at least 20 carbon atoms and of specific unsaturated C18 fatty acids. Said products are characterised by a low carbohydrate content, in addition to a high oxidation stability and bioavailability of the bioactive fatty acids. The fat products are used in t he foodstuff industry for animal and human consumption.
