Invention relates to the preparation at oil fields and oil-refining enterprises, in particular, dehydration and demineralization of oil, and it can be used for demulsification of petroleum emulsions. The method of dehydration and demineralization of oil includes action on the petroleum emulsion by pulse high-voltage field with electrical discharges without formation of the channel of through conductance at field strength not less than 5 kV/cm with the impulse length not are more than 6?106 at viscosity of the emulsion ?50 ?C not more than 15 centistokes and not less than 9 kV/cm at the length of impulse 10?106 with the viscosity of emulsion ?50 ?C more than 15 centistokes, after action on the petroleum emulsion by the pulse of high-voltage field it is subject to action of DC field of strength, which varies from the maximum value equal to 0.3 û 0.5 of the strength of pulse high-voltage field to the zero. Offered method allows to strengthen and to accelerate the processes of coagulation of coarse dispersed and fine dispersed particles of water and to weaken the colloidal system of emulsion to its stratification and precipitation of the drops of water with the salts dissolved in it without subsequent precipitation.
