<p>The procedure consists of immersing a set of wooden strips or laths (2) in a cask (10) of alcoholic beverage, with the origin, quantity, contact surface area and degree of heat treatment of the wood designed according to the original qualities of the beverage and the desired organoleptic modifications to be made to it. The strips or laths can be heat treated by roasting at a temperature of 180, 200 or 220 [deg]C, or they can be used without heat treatment, and the immersion can be carried out one or more times of different durations. A series of strips or laths can be employed, for example, in a cartridge (1) formed by a support (3) to which they are attached with spaces between them, the cartridge being fitted to a ring (11) inside one end of the cask that allows it to be removed and replaced as required.</p> |
