<P>PROBLEM TO BE SOLVED: To provide a sterilization method of processed items in which survived or adhered microorganisms are definitely sterilized in the processed items obtained by an indirect-heating processing of items to be processed to suppress or prevent fermentation due to the microorganisms. <P>SOLUTION: This sterilization method comprises the steps of indirectly heating an item to be processed by the indirect-heating means 1 to obtain a processed item 1a, transferring the processed item 1a by a transporting means 2, irradiating the processed item 1a with electron beams by a sterilizing beam-irradiation means 3 to annihilate and remove microorganisms survived in the processed item 1a.
