PURPOSE: A method for manufacturing oil for frizzing a jajang sauce by mixing sesame oil, perilla oil, sunflower seed oil, red pepper seed oil and cheongyang red pepper seed oil, together with conventional corn oil is provided. The manufactured oil gives to jajangmyun a good taste and flavor as well as a new and pleasant aftertaste without a greasy taste when applied thereto. CONSTITUTION: Oil for frizzing jajang sauce is prepared by mixing 90% by weight of corn oil, 1.5 to 2% by weight of sesame oil, 1.5 to 2% by weight of perilla oil, 0.5 to 1% by weight of sunflower seed oil, 5 to 5.5% by weight of red pepper seed oil and 0.5 to 1% by weight of cheongyang red pepper seed oil at 30 to 40deg.C. For an example, 15L of corn oil, 250ml of sesame oil, 250ml of perilla oil, 125ml of sunflower seed oil, 775ml of red pepper seed oil and 100ml of cheongyang red pepper seed are mixed at 40deg.C to give 16.5L of mixed oil for frizzing a jajang sauce. |
