FIELD: canned food industry. ^ SUBSTANCE: method involves preparing fruits; providing cavitational grinding of fruits in liquid medium in rotor-cavitational extractor; separating pulp; adding sugar solution before cavitational grinding process and sterilizing; introducing, in conjunction with sugar solution, specific preparation in an amount of about 0.1% by weight of fruits, said preparation being produced by sequential extracting of Mortierella hygrophila micromycet biomass with non-polar extractant in above-critical state; at this stage, separating first extract, which is further used for producing of preparation; sequentially extracting biomass with water, alkaline, water, acid, water, alkaline, and water; joining resultant solid residue with first extract. ^ EFFECT: increased efficiency of process and improved quality of canned product owing to improved retention of color of basic material, and increased resistance to breaking of canned product during storage. |
