An apparatus and method for producing artificial caviar is disclosed which comprises a tower (14) having a head (22). Caviar mixture is supplied from container (12) via pump (18) and filter (20) to provide a stabilized flow. Cooking medium is supplied from a reservoir (34) via a pump (38) through a heater exchanger (47) to heat the cooking medium supplied into the tower (14). The head (22) includes a vibrating mechanism for disrupting the stabilized flow of caviar to form drops which pass through tubes (62) into the tower (14) so the caviar is cooked as the caviar drops under the influence of gravity. The caviar is removed at outlet (26) and supplied via conduit (28) to a reservoir (23) and separator (29) for separating cooking medium from the cooked caviar.
