PROBLEM TO BE SOLVED: To provide a method for producing fermented milk with which fermentation is promoted without using a fermentation promoter, etc., and to provide a new fermented milk obtained by the method for production and having a hard texture without disintegrating the texture in a distribution stage though having denseness and mellowness absent in a conventional product. SOLUTION: The fermentation efficiency is improved by reducing dissolved oxygen in a fermented milk raw material mix in starting the fermentation according to replacement with an inert gas. Thereby, the fermentation time is shortened to improve the productivity. The method for producing the fermented milk comprises carrying out the fermentation in a state at usual temperature. The method for production at a lower temperature than the usual fermentation temperature provides the new fermented milk having a denser and mellower flavor in the usual fermentation time than that of the fermented milk having a mellow flavor and obtained by the conventional low-temperature and long-time fermentation and the hard texture without disintegrating the texture in the distribution stage.
