FOODS CONTAINING LARGE AMOUNT OF FUNCTIONAL COMPONENTS AND METHOD OF PRODUCING THE SAME

It is intended to provide a food containing a large amount of functional components, which is obtained by using a processed barely product (for example, barley seeds having been soaked in cold or warm water, sprouting barley or barley malt) as a food material so as to increase the contents of GABA and other desired free amino acids in the food in the course of the production process thereof without using functional components such as amino acids as additives, and a method of producing such a food. It is also intended to provide a food containing functional components in such a large amount as being comparable to those obtained by using a processed barley product even in the case of adding unprocessed barley to materials commonly employed or using cereal materials commonly employed alone, by controlling the production process, and a method of producing such a food.
