<P>PROBLEM TO BE SOLVED: To provide a coagulation agent for tofu (bean curd) having good stability and dispersibility and giving a tofu having good taste and flavor. <P>SOLUTION: The coagulation agent for tofu contains (1) magnesium chloride at a concentration of 25-40 wt.% in the agent and 50-70 wt.% in an aqueous phase and (2) 1.0-2.0 wt.% polyglycerol condensed ricinoleic acid ester and 0.5-2.5 wt.% polyglycerol fatty acid ester having the number of carbon atoms of the fatty acid of ≥20. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
