<P>PROBLEM TO BE SOLVED: To provide a method for producing a fermented tomato beverage having excellent taste and flavor, and abundantly containing lycopene. <P>SOLUTION: This method for producing the fermented tomato beverage comprises (1) a step for mixing a tomato raw material containing a pulp material, with a liquid sugar in an amount regulated so as to be within the range of 10-30% Bx, a SO<SB>2</SB>source regulated so that the content of the SO<SB>2</SB>may be 30-100 ppm, and water, (2) a step for fermenting the mixed product by adding a wine yeast, and (3) a step for removing the yeast and the pulp material from the fermented mixture. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
