Carbon dioxide probe assembly removes nervous tissue from the spinal cord of an animal slaughtered e.g. for beef

A cleaning assembly loosens and exhausts nervous tissue from the spinal cord in an animal cadaver. The assembly has a cleaning head that loosens spinal cord tissue, a carbon dioxide snow feed tube and a vacuum tube that removes loosened nervous tissue. The carbon dioxide feed is incorporated within the cleaning head. The carbon dioxide is discharged as snow from jets within or on the cleaning head and discharged at high pressure.
