摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing a retort food having a massed taste composed of deliciousness, sweetness, saltiness, and the like, that is, an excellent taste with a solid flavor. <P>SOLUTION: This method comprises following (1) to (5) steps, (1) a step for dividing spices into two groups, (the first group spices) one or more of curry powder, cardamom, clove, fennel, fenugreek, garlic, nutmeg, onion, cumin, turmeric, coriander, laurel, cayenne, pepper and cinnamon are included, (the second group spices) one or more of cumin, cardamom, pepper, coriander, cayenne, star-anise and clove are included, (2) a step for obtaining a flour roux by heating materials containing starch, oil and fat, and the first group spices, (3) a step for obtaining liquid or pasty food by adding and mixing a water-containing material and the second group spices to the roux, (4) a step for filling and sealing the liquid or pasty food in a container and (5) a step for treating retort processing. <P>COPYRIGHT: (C)2005,JPO&NCIPI
